Mandarin Chicken
Ingredients
- 1 pound chicken, cut into 1/4-inch cubes
- Oil, for pan-frying
- Chopped scallion, for garnishing
Marinade
- 1 Tablespoon light soy sauce
- 1 Tablespoon Shaoxing rice wine or cooking sherry
- 1 Tablespoon cooking oil
- 1 Tablespoon cornstarch
- 1 Tablespoon water
Sauce
- 2 Tablespoons cooking oil
- 4 Tablespoons soy sauce
- 1 Tablespoon lemon juice
- 2 Tablespoons sugar
- 1 Tablespoon minced ginger
Directions
Combine the marinade ingredients in a bowl, add the chicken, and stir to coat. Set aside for 30 minutes.
Whisk together the sauce ingredients in a small bowl.
Heat a pan over high heat and add the oil. Once the oil is hot, add the pork and wait 30 seconds before stirring. Stir fry the chicken until it is cooked through, then add the sauce. Continue stir frying another 1-2 minutes. Serve with rice.
